This salad is really quick and easy to prepare and perfect for taking to work
Prepare 10 minutes
Cook 12 minutes
72g dried fusilli pasta
3 tbsp light mayonnaise
2 tsp tomato ketchup
140g peeled prawns, cooked, thawed if frozen
10 cherry tomatoes, halved
¼ cucumber, cut into small chunks
2 tsp lemon juice
2 little gem lettuces, shredded
Cook the pasta in boiling salted water for 12 minutes, drained in a colander and cool under cold water.
Mix the mayonnaise and tomato ketchup in a medium bowl. Add all the remaining ingredient except the lettuce and mix well.
Serve on top of the lettuce.
