Pea and Mint Soup

This is a delicious fresh soup that is easy to prepare and has a fantastic colour.




  1. Heat the oil in a large saucepan over medium heat. Add the onion, carrots, celery, and garlic, mix together and cook for 10 minutes with the lid askew.
  2. Add the boiling water, stock cubes, and frozen peas. Bring to the boil then simmer over low heat for 10 minutes.
  3. Use a hand blender to blitz the soup until it is smooth.
  4. Season with salt and pepper.
  5. Serve garnish with a few mint leaves


Optional: Add cooked ham when serving
