These spicy scrambled eggs make a great alternative for breakfast

  1. Heat the oil a small saucepan over a medium heat, add the onion then the garlic and cook for 30 seconds.
  2. Add the chilli, tomato and finally the eggs and seasoning and cook, stirring continuously for 2-3 minutes, until the eggs are softly scrambled.

Notes

Serve with seeded or wholemeal toast.
