Healthy Quesadillas

Quesadillas [Kay-sa-dee-yas], make a delicious lunchtime snack served with tomato salsa and a mixed salad.

Instructions

  1. Preheat a panini press/toaster or large frying pan.
  2. Layout the tortilla and spread the ingredients on one side.
  3. Carefully fold the tortilla in half so you end up with a semi-circle.
  4. Cook for about a minute in a panini press or 30 seconds each side if you are using a frying pan.
  5. Cut into wedges using a pizza cutter and serve with salsa and salad
