This spicy pasta dish is quick and easy to make and is a great store cupboard standby.

1 tsp olive oil
2–4 red chillies, deseeded and finely chopped
2 cloves garlic, finely chopped
2 x 400g tins of chopped tomatoes
1/2 x 25g pack fresh basil, roughly torn
200g dried penne or fusilli
Heat the oil in a medium saucepan and cook the chilli, garlic and half of the basil for 2 minutes. Add the tomatoes and simmer gently for 10 minutes.
Meanwhile, cook the pasta in a large pan of boiling water according to the packet instructions, then drain and add to the pasta to the sauce. Add the remaining basil and toss well. Add a splash of cooking water to loosen if needed.
Divided between 4 bowls and grind over some black pepper. Serve with a leafy green salad on the side.
