This crustless quiche is delicious hot or cold and makes a great lunch to take to work.
10 slices of back bacon
2 large courgettes, grated
180g cheddar, grated
1 Tablespoon olive oil
6 large eggs, lightly beaten
Salt and pepper
Preheat the oven to 170°C. Lightly grease a pie tin and line with baking parchment.
Grill the bacon until crisp and transfer to a plate lined with kitchen paper. Leave to cool then cut into small pieces.
In a large bowl, mix together the eggs, courgette, cheese, oil and bacon. Season with salt and pepper. Pour into a pie tin and bake for 20 to 25 minutes, until firm. Grill for a few minutes until the top is lightly browned. Remove from the oven and leave to rest for 5 minutes.
Serve it with a salad and new potatoes.
Delicious served warm or cold.
