Healthy fajitas which are quick and easy to prepare.

4 small chicken breasts (420g)
2 peppers, deseeded and sliced
1 medium red onion, peeled and sliced
2 tsp smoked paprika
2 tsp ground cumin
1 tsp dried oregano
1 tbsp olive oil
Salt and pepper
4 tortilla wraps
88g cheddar cheese
4 tbsp homemade salsa (see recipe)
Slice the chicken into thin strips, roughly the same size as the peppers. Put in a bowl, along with the peppers and onions. Sprinkle with the paprika, cumin and squeeze over the juice of 1 lime. Add the olive oil and season with salt and pepper, then mix well.
Heat a non-stick grilled pan or wok over a medium-high heat and add the chicken and vegetables. Stir-fry for 8 to 10 minutes until the chicken is cooked.
Serve with a Tortilla wrap, salad, salsa and cheese.
